Before the raw lifestyle, I had never heard of Stevia sweetener. In fact, when some of my recipes called for packets of Stevia, I thought, what? I've heard of Stevia Tea before, but never sweetener packets! I thought that they must have been referring to tea packets, so I hit the Whole Foods and started asking questions.
As it turns out, the item isn't even located in the sugar or sweetener isles. It's located in the supplement area, actually, in the oddest place!
I bought a box by 21st Century Healthcare and took it home. One recipe I decided to try it in was Chai, made with Almond milk and stevia packets and sprinkled with cinnamon.
The stevia is extremely fine, like a dust powder that compacts. When I emptied the packet into the cold almond milk, the stevia balled up into little pebbles. Let me tell you, stirring that until it dissolved took some time!!
The stevia finally broke down and dissolved after about five minutes of stirring. I tasted the packet powder directly and was struck by a bitter taste. I expected something sweet, but it was very bitter. Then, after a few seconds, it got sweet. The remaining aftertaste was a mixture of both.
Next, I tried a drink of straight Almond milk. Then, I tried the Chai and let the flavor dissolve on my tongue. I was pretty amazed by the fact that the Stevia did indeed sweeten the almond milk, if ever so slightly, in a very light way. This sweetener is definitely something you'd want to use for a light sweet. Of course, make sure you stir it into cold drinks thoroughly; when I got to the bottom of my Chai, a little ball of Stevia wound up in my mouth and I can tell you firsthand, it wasn't a pleasant surprise!
Altogether, this plant leaf is a great way to get pure sweet flavor in hot and cold drinks without using pure sugar or fake sweeteners.
