Okay, somebody tell me I'm not the only one who had never before heard of agave nectar until I picked up my first official resource on raw living, the Raw Food Detox Diet by Natalia Rose.  I felt like such a goofball because here she was, referring to it left and right, and yet I had no idea what she was talking about.  As usual, I consulted my number one knowledge base: Google.

Apparently, Agave Nectar is from the core of the Mexican Agave Cactus (the same cactus, mind you, that tequila comes from).  This amber-colored liquid is apparently 25% sweeter than regular sugar, thinner in consistency than molasses but around the same thickness as light maple syrup.  It's also natural sweetner which does not cause a glucose reaction in the blood, so it's great for diabetics.  Now, please tell me, where has this liquid been all my life?

To find the product, I had to scour the Whole Foods.  I had no idea where it would be, but I assumed it would probably be located in the sugar and baking isle.  After a kind man directed me to the right area, I found it without a problem.  Rows and rows of Agave Nectar lined the shelves and ranged in price from as low as $4.99 a bottle to as much as $21.99.  I wasn't sure which was better, so I grabbed the Whole Foods 365 version for $6.99 and took it home with me.

I wasn't sure what to try it in, so I put the bottle on the counter and stared at it for a while.  I think I figured it would speak to me, cry out something like "Pour me in your almond milk!" or similar so that I'd know what in the world I should try this in that would give me the best reviewable flavor.  After some contemplation and the realization that it was after 6 pm and my stomach was growling, I decided on a baked sweet potato (yes, not entirely raw but again I'm transitioning here - give a girl some slack). 

After warming the sweet potato up, I mashed it and poured in around 2 tbsp of the agave.  Now I must warn you, this stuff pours out pretty fast so don't get all crazy and squeeze the bottle like ketchup - you might end up with bowl of agave and a sweet potato on the side!

After stirring the liquid in, I was amazed to see that it dissolved really quickly.  I tried a bite and my mouth was pleasantly surprised!  It really is sweeter than sugar yet light enough in flavor so that it doesn't taste like you just drank a donut.  I ate my sweet potato so fast, I think I gave myself a stomach ache.

I've since tried this in chocolate syrup, raw brownies and even tested my own little idea: sweet almond milk Chai.  Mmmm good!  I think there's a consipiracy going on out there that the sweet things industry doesn't want us to know about, and this Agave "Nectar of the gods" is definitely one of them!
