True to it's word, this is a cookie!!  A cashew cookie, nonetheless!

Ingredients:

• Cashews
• Dates

This bar was such a pleasant surprise!  It was just like a cookie - slightly chewy, slightly dry, a little crumbly and absolutely full of cashews.

It was also just sweet enough to taste great, but not too sweet.  I'd love to have this bar with me on a day when I need something powerful but tasty, a treat but not a sweet tooth attack.  I'd also recommend it as a breakfast bar for anyone who is on-the-go.  The simplistic nature of the bar also makes it a great combo item for a variety of meals.

I sure hope Larabar has more like this little diamond in the rough.  I'd rather have a stack I can use for sweet days and another for those days when I need something to eat but don't have time to stop and buy something or prepare it beforehand.
